Spéculos Sponge (take 1) 

I’ve said it before and I’ll say it again. I’m not great at cakes. Often I will say the toddler helped if only to disguise my train wreck of a sponge. 

However. I do enjoy baking and I do it a lot because cakes are yummy and it’s a fun thing to do with Sebastien. You’d think by doing it often I’d learn how to be good at it, but the thing is I rarely make something more than once and I love to experiment by adding flavours and switching out ingredients to match what I have in the cupboards.

Yesterday I had a friend popping round. It also happened to be her birthday so I hastily knocked up a sponge. I use the same basic recipe every time i.e.: 60g of ingredients (caster sugar, butter, plain flour) per egg. 

240g caster sugar (or for this bake 180g of caster sugar + 60g Spéculos paste )

240g butter

240g plain flour 

4 large eggs

2tsp baking powder (1/2 tsp per egg!) 

(Optional) Vanilla/almond extract 
As per my normal style I have swapped out some of the ingredients. So for my 4 eggs I’ve used 240g of butter with 180g of caster sugar, then added 60g of Spéculos paste before creaming it all together. 

After creaming the butter, Spéculos and Sugar I’ve added the 4 eggs (beaten) then folded in the flour with 2 tsp of baking powder before transferring in to a tin and adding 3 dollops of Spéculos on top. 

Bake in the oven for 55-65 minutes at 160 (fan) until a skewer comes out clean when plunged in the cake. (Just don’t plunge it through the Spéculos!) 

You can also use this for a batch of 18-24 cupcakes (depending on the size of your cupcake tray!) just bake for 25-28 mins. 

Turn out of the oven and on to a wire rack to cool. 

Now the plan was to allow the cake to cool and whip up some buttercream, but my friend arrived about 15 minutes after I took the cake out of the oven and we couldn’t wait to tuck in! So here is what is left of the cake; 
What I can tell you is this is definitely one on the make again list. (Shock horror!) The texture is amazing, and the flavour has a hint of spice without being overpowering. I will however either forgoe the dollops of Spéculos on the top, or swirl them in to the top of the cake a bit more. Maybe next time I will even manage to decorate it before it gets eaten!

  1. It’s a biscuit paste, it’s the same flavour as those slightly spicy biscuits you get with coffee. You can get it in the uk now, but I had this imported from France! X
